Corvinone is a very generous vine, but only in particular conditions does it reach a vegetative balance. For this reason we proceed throughout the year with successive thinning of the bunches and only 20% reaches perfect ripeness and is used for the production of Amarone. The drying occurs very slowly and the fermentation is done at low temperature. This allows you to have a fresh, elegant but also round and persistent wine.
