Production process: For the Syrah variety, follow the "bleeding" method (methodsaignée) and for the Cinsault and Mourvèdre varieties, the cryoextraction method (methodemaceration). The grape juices are mixed, followed by alcoholic fermentation in a stainless steel tank using selected yeast strains, at temperatures of 14- 16 °C. Maturation on lees and stirring at intervals
